Yay another baking post! I had a Saturday completely free so of course I decided to bake. If you’d like to know how I made my Cookies & Cream Cupcakes keep reading..
For the cakes
Heat the oven to 180 degrees celsius.
Recipe
- 18 Oreo thins (you can use the same amount of normal Oreos for this step)
- 200g Butter
- 200g Caster sugar – sifted
- 150g Self raising flour – sifted
- 50g Cocoa powder – sifted
- 4 eggs
- 50ml Whole milk – this may not be needed
Method
- Line 18 muffin tin holes with cases. I can make 18 with this recipe but depending how many you want to make this may differ.
- Put an oreo in each. Like above the number may differ if you want to make more or less cakes than I do.
- Beat together the butter and sugar until light and fluffy.
- Add the eggs one by one until they are all combined.
- Add the flour & cocoa powder bit by bit.
- Mix until combined.
- If the mixture is slightly thick add a drop of milk. You may not need it all. I used about half.
- When you are happy with the consistency fill your cases.
- Bake for 20 minutes.
For the icing
Recipe
- 200g Butter
- 500g (yes really) Icing sugar – sifted
- 12 Oreo thins (8 if you are using normal Oreos)
- 50ml Whole milk – this may not be needed
- Extra Oreo thins (or normal oreos) for decoration
Method
- In a food processor blend the Oreo thins to crumbs
- Beat the butter until smooth.
- Bit by bit as your mixing add the icing sugar.
- If the icing is stiff add milk. You may not need it all. I used about a quarter.
- With a wooden spoon or spatula mix in the Oreo crumbs.
- When the cakes are completely cool ice the cakes. I chose not to pipe mine but if you’d like to pipe yours use the biggest type of nozzle you have as the crumbs may block it.
- Top off with the rest of your Oreo thins (or normal oreos). I used half on each.
Mix butter until smooth Add icing sugar Mix in crumbs There you have it Cookies & Cream cupcakes! These were a hit with my whole family and my bestfriend and her boyfriend loved them too! Will definitely be making these again!
