Coffee & Walnut Cake

Ieuan says all the time how much he likes coffee and walnut cake so I made one! Turns out it was too ‘coffee-y’ and he didn’t like the walnuts in it, so that was great.. BUT my parents, work colleagues and everyone else who tried it absolutely loved it!

Recipe

For the cake

  • 200g butter
  • 2 tbsp instant coffee
  • 200g caster sugar
  • 4 eggs
  • 200g SR flour
  • 1tsp baking powder
  • 100g chopped walnuts

For the icing

  • 2tbsp instant coffee
  • 150g butter
  • 300g icing sugar

Method

Heat oven to 180 degrees celcius

For the cake

  • Grease two circle tins
  • Dissolve coffee in 1 tbsp boiling water and leave to cool
  • Mix butter & sugar until combined
  • Mix in eggs one by  one
  • Using a spoon/spatula fold in the flour and baking powder
  • Stir in the walnuts and coffee
  • Divide the mixture between two tins
  • Bake for 25 minutes until golden brown

For the icing

  • Dissolve coffee in 1 tbsp boiling water and leave to cool
  • Mix butter until soft
  • Mix together butter and icing adding the icing bit by bit
  • Stir in the coffee until combined – I didn’t use it all as I didn’t want it too strong
  • When cakes are completely cool use half the butter icing to sandwich the two cakes together
  • Use the rest of the icing on top of the cake
  • I dropped on a bit of the coffee and swirled in into the icing
  • Sprinkle over the remaining walnuts

    And there we have it your coffee and walnut cake!
