Ieuan says all the time how much he likes coffee and walnut cake so I made one! Turns out it was too ‘coffee-y’ and he didn’t like the walnuts in it, so that was great.. BUT my parents, work colleagues and everyone else who tried it absolutely loved it!
Recipe
For the cake
- 200g butter
- 2 tbsp instant coffee
- 200g caster sugar
- 4 eggs
- 200g SR flour
- 1tsp baking powder
- 100g chopped walnuts
For the icing
- 2tbsp instant coffee
- 150g butter
- 300g icing sugar
Method
Heat oven to 180 degrees celcius
For the cake
- Grease two circle tins
- Dissolve coffee in 1 tbsp boiling water and leave to cool
- Mix butter & sugar until combined
- Mix in eggs one by one
- Using a spoon/spatula fold in the flour and baking powder
- Stir in the walnuts and coffee
- Divide the mixture between two tins
- Bake for 25 minutes until golden brown

For the icing
- Dissolve coffee in 1 tbsp boiling water and leave to cool
- Mix butter until soft
- Mix together butter and icing adding the icing bit by bit
- Stir in the coffee until combined – I didn’t use it all as I didn’t want it too strong
- When cakes are completely cool use half the butter icing to sandwich the two cakes together
- Use the rest of the icing on top of the cake
- I dropped on a bit of the coffee and swirled in into the icing
- Sprinkle over the remaining walnuts
